Directions

  1. Whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper to create the marinade.
  2. Place the cubed chicken breasts or pork loin in a shallow dish, and pour the marinade over the meat, ensuring it is well coated. Cover the dish and refrigerate for 1-2 hours to allow the flavors to meld.
  3. Preheat grill to medium-high heat (about 400°F / 200°C).
  4. Thread the marinated meat onto the soaked skewers, dividing evenly.
  5. Place the skewers on the preheated grill and cook for 5-6 minutes per side, or until the meat is cooked through and has nice grill marks.
  6. Once the skewers are done, remove them from the grill and let them rest for a few minutes.
  7. Serve Greek Souvlaki hot off the grill with warm pita bread, sliced tomatoes, sliced onions, and tzatziki sauce for dipping.
