Preparation Time: 5 minutes
Cooking Time: 9 minutes

Ingredients

For the Fritters

  • 1 (16.3-ounce / 8-count) package refrigerated biscuit dough
  • ½ cup (60g) chopped pecans
  • ¼ cup (60g) pumpkin purée (not pumpkin pie filling)
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon pumpkin pie spice (or homemade blend of cinnamon, nutmeg, and ginger)
  • 2 tablespoons (30g) unsalted butter, melted
  • Olive oil spray or cooking spray for greasing

For the Glaze

  • 1 cup (120g) powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon (15g) pumpkin purée
  • 2 tablespoons (30ml) milk (plus more if needed to adjust consistency)
  • Optional: a pinch of sea salt or a splash of vanilla extract for extra flavor

Directions

·        Prepare the Fritters

Preheat your air fryer to 330°F (165°C) if required by your model. This ensures the fritters cook evenly.

Lightly spray the air fryer basket with olive oil or cooking spray to prevent sticking. You can also use an air fryer–size baking sheet sprayed with oil.

Turn the biscuit dough out onto a cutting board. Cut each biscuit into 8 small pieces. Use a knife or kitchen scissors for this.

In a medium mixing bowl, combine the biscuit pieces, chopped pecans, pumpkin purée, granulated sugar, and pumpkin pie spice. Toss well until the ingredients are evenly distributed.

Using your hands or a spoon, shape the dough mixture into 8 mounds. These will expand slightly during cooking, so ensure they are not too large.

Drizzle the melted butter over each fritter. This adds flavor and helps the fritters crisp up nicely in the air fryer.

·        Cook the Fritters

Place the fritters in the greased air fryer basket, ensuring they are not overcrowded. If needed, cook in batches to maintain proper air circulation.

Set the air fryer to 330°F (165°C) and cook for 7 minutes. After 7 minutes, check for doneness. The fritters should be golden brown and cooked through. If they are not fully cooked, continue to cook for an additional 1 to 2 minutes, checking frequently to avoid burning.

Once done, carefully remove the fritters from the air fryer using tongs. Allow them to cool on a wire rack or a plate for about 10 minutes before glazing. This cooling period helps the fritters firm up and prevents the glaze from melting off too quickly.

·        Prepare the Glaze

Combine the powdered sugar, pumpkin pie spice, pumpkin purée, and milk. Stir until smooth. The glaze should be thick but pourable. If it is too thick, add a bit more milk, a teaspoon at a time, until you reach the desired consistency. If it is too thin, add more powdered sugar.

For additional flavor, add a pinch of sea salt or a splash of vanilla extract to the glaze. This enhances the overall taste and adds depth to the sweetness.

·        Glaze the Fritters

Once the fritters are cool, drizzle the glaze over the top. Use a spoon or a small whisk to achieve a drizzling effect. Allow the glaze to set for a few minutes before serving to ensure it adheres properly.

·        Serve

Serve the fritters warm or at room temperature. They make a delightful treat for breakfast, a snack, or a dessert. Pair them with a hot beverage like coffee or tea for a comforting experience.

Tips

Use pure pumpkin purée, not pumpkin pie filling, which contains added spices and sugars.

If you’re not a fan of pecans, substitute with walnuts or omit the nuts entirely for a nut-free option.

Adjust the amount of pumpkin pie spice to your taste. If you prefer a stronger spice flavor, increase the spice blend or add additional cinnamon, nutmeg, and ginger.

If you prefer a crunchier texture, add a bit of granulated sugar or cinnamon sugar to the fritters before cooking.

Store leftover fritters in an airtight container at room temperature. They are good for up to 2 days.

These fritters can be reheated in the air fryer
